Hand picked and sorted fruit whole bunch pressed straight to barrel with full solids. A small portion skin contact destemmed berries for 10 days. Ambient yeast ferment and aged for 10 months in a mixture of old barrels and 1200L foudre. 3330 bottles made.
Uplifting and textural, incredibly interesting with wonderful line and length. Ripe fruit and brisk acidity; chalky phenolics, harmoniously balanced and extremely moorish. This is not your usual Australian sauvignon blanc.
